“I didn’t realise” is a saying that employees often use to excuse poor health and safety practice. Unfortunately for staff and their management and property owners, it won’t wash in the eyes of health and safety law. Due diligence means taking all reasonable precautions to avoid harm being caused in the workplace, whether it’s through food poisoning, contamination or accidental harm. Failure to control activities and working practices in any business can lead to costly fines, loss of jobs, customers and even closure.
Staff training in food safety and health and safety are key to the success of any catering business. A clear measure of the success of training is being awarded a ‘level 5’ food hygiene rating. Once achieved, there should be no going back from the top. Staff must be constantly ‘due diligent’ and understand the vision and policies of their employers and, be recognised and praised for their part in the company’s achievements.
